I Got Sauced!!!


Ready for the oven!

I bought 25+ lbs of tomatoes for $15.00 in Maine, aren't they beautiful!
No peeling!  I quartered them, tossed on some garlic cloves, drizzled some 
olive oil, and roasted them in the oven at 350 degrees for about 45 minutes!


I was immersed in my job!
I used my immersion blender to make my sauce. 


Wow, 10 jars!
Add 1 tablespoon of lemon juice to the bottom of each jar.
Wipe the rims, inside and outside.


Everyone in the pot!

Add the tops after you've softened them in warm water 
then secure with the band ~ hand tight.
Process for 45 minutes when the water returns to a boil.


Can't wait to do another 10 jars!

  5. Such dedication! I know I should do it but I never seem to get around to it! This recipe sounds so simple I bet the taste is stunning. Roasting the toms is an excellent way to bring out their flavour. Can't wait to receive the one youre sending me!

  6. The jars look great. The recipe is simple and I think highlights all the ingredients in the sauce. Didn't the house smell great while the tomatoes were roasting?

    1. That's the beauty, no peeling involved!!! Believe me, I've peeled my share of tomatoes!!! One year I peeled 100 lbs! Yes, you read right!

  11. Nicely done! We have access to an organic food co op that has had the most beautiful tomatoes this year. I typically don't make my own sauce :) but your recipe is tempting me!! Your home must have smelled wonderful as this sauce simmered on the stove.

  14. No peeling? Oh my word what a great recipe! I only wish you had posted this ealier as I've let my chickens indulge themselves with tomato after tomato, hence not a one remains, but there is always next year. Thanks for sharing, have a great weekend, Julie.
