Blueberry Sour Cream Scones for St. Paddy's day


It's St. Patrick's Day and we thought we'd celebrate by taking a ride on this glorious warm (60F) and sunny day to Maine and stay at the cottage for a few days!  Spring has finally arrived - unofficially!  We've been walking, shopping and having a great escape for ourselves!


So I thought I'd bake some blueberry sour cream scones for St. Patrick's Day to have with our tea, we love our tea!  Well, I was running short of time and I decided to try the semi-homemade method.  They are still made from scratch, I scratched my head before I read the directions!  LOL!!!


Most of you know King Arthur has the best flours for any type of baking, so I knew it had to be good (check out the link on my side bar).  I was amazed at the size of the blueberries in this mix.  All I had to do was cut 6 tablespoons of butter into the mix, and then beat one egg into 1/3 cup of milk and add to the dry ingredients.  


Shape into an 8 inch round on a cookie sheet covered with parchment paper.


Cut into 8 wedges and separate slightly.


15 minutes at 400 degrees F.
They are melt in your mouth delicious!

  7. Very nice! And I like the "made from scratch" bit :-) By the way, spring (meteorologically speaking) has officially started on the 1st of March... although from the temperatures and cold wind and slate grey skies we are having over here at the moment, it looks more like November than March.

  14. I love King Arthur products and went to a fun bread baking demo they had here last summer. Their scone mix made wonderful looking scones!

    I have a similar Belleek teapot and cups and saucers. They are such treasures!

  21. This is a wonderful way to enjoy scones! I will have to look for this mix in a couple of our stores. It was a beautiful St. Pat's Day here, as well; but it has since turned colder again. Wish things would even out soon. I want warmer weather! :-)

  23. I saw you had a St. Patrick's Day post, which I missed, so I had to read it! First of all, your scones look delicious -- I will have to try that King Arthur's mix, it looks great. Second, oh my goodness!! I LOVE YOUR BELLEEK TEAPOT!!! (and your cup and saucer too!) I am CRAZY about the Belleek pieces that have the twig handle! They are so pretty. You are a very humble lady, because I would have said, "Everyone! Look at my gorgeous Belleek stuff!" LOL! I have a few pieces and I would love to do a post on them one day... you should do one too! Anyway, lovely pieces, I enjoyed seeing them!
