The Cranberry, or as I like to think of it ~ nature's ruby! This little power fruit is packed with all kinds of excellent benefits! Lots of phyto-chemicals that support good heart, immune and anti-cancer health!
Before I knew anything about that, I bought them simply because I liked them! Below are a few reasons why I enjoy them! Oh, they keep well in your freezer too!!

Below is a recipe for a super simple crustless cranberry pie! I hope you enjoy it as much as I do!

1 cup all-purpose flour
1 cup white sugar
1/4 teaspoon salt
2 cups cranberries
1/2 cup chopped walnuts
1/2 cup butter, melted
2 eggs
1 teaspoon almond extract
DIRECTIONS:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
- Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice

DeleteThat looks interesting. Can't say that I have ever had a cranberry pie, but I must add cranberries to my Thanksgiving list. I love to freeze them and float them in the punch bowl.

DeleteI've never really been a huge cranberry fan. It's not a hugely popular fruit in the UK I guess because we don't grow it but I've grown to like it over the years and of course it's great with vodka! The crust less pie is such a fab idea though. I love the look of it.
ReplyDeleteHi Dom, cranberries really are a New England delicacy! We are fortunate enough in Massachusetts to have lots of bogs! I'm actually looking enough to be able to drive a couple of towns over to a big and buy them right there. The other thing I like is cranberry honey! Have you ever tried that? It's really a sight to see the beehives right along the shore with the bogs are. Hope all is well with you! We are getting ready for a big American Thanksgiving! We're setting the scales back 10 pounds! LOL
