She Called for Pie . . .



I made this strawberry rhubarb pie because my good friend Susan at From Beyond My Kitchen Window came to vist us in Maine for a few days, and I know she enjoys my pies.  And good company is the perfect excuse to bake a pie!

We had such a good time touring around Portland, walking around the Old Port, Munjoy Hill, the Western Promenade, visiting a farmer's market, a fish market and a few other sites. 

Would you believe I saw a pie at the farmers market for $20.00 . . . who would pay that?!?!?




We always have lots of laughs! We've been laughing since we met as teenagers (just a few short years ago  . . . )!!!  My husband has a very dry, wicked sense of humor, and he kept us laughing too!  Of course Duke just adores his girlfriend, he loves it when she comes to visit!

So, I'm thinking of entering this pie in a contest, what do you think?  


Recipe
1 pie crust - home made or store bought

Ingredients
  • 4 cups of rhubarb
  • 2 cups of strawberries
  • 2/3 cup of sugar
  • 1/4 teaspoon cinnamon
  • 2 teaspoons flour 
  • 2 pats of butter (broken up and sprinkled around the top)
  • 1 egg

Directions
  • Place bottom crust in the pie plate
  • Place fruit in pie plate
  • Mix sugar, cinnamon and flour together and sprinkle over top (I like to give the mix a little stir with a fork after I sprinkle it on top)
  • Add the butter (you don't need the butter, it just makes the juice velvety) 
  • Weave your lattice top, crimp the edges and place strawberry cutouts around the edge.  I used a strawberry cutter.
  • Beat the egg into submission, then give the lattice a light egg wash to get that golden look.

Bake at 400 degrees for 60 minutes in a pre-heated oven!

  1. Definitely one for a contest, this beautiful pie of yours! Rhubarb and strawberry - sounds very much like early summer to me. In my part of the world, we have rhubarb and strawberries in May and June, while right now, we're inundated with apples, plums and grapes.

  3. beautiful pie. my rhubarb has grown back so i should make one more of these. i am feeling like apple though. my apple trees only gave me 2 apples though. i bet your friend enjoyed this pie!

  4. While I love strawberry and rhubarb pie, I'd have a hard time cutting this one. It is beautiful. I had to get closer and look at those strawberries deliciously circling the edges.
    I am in awe!! I say enter that contest!

  5. Oh it's so pretty that I'm sure you'd win. The little strawberry crusts decorating the top are darling. Hmmmm...I was just dreaming of pie. It's not going to happen...yes, I might pay $20, though I'd prefer to buy one for $5 from the library sale at Thanksgiving.

  7. I would pay 20.00 for that pie! Pie was my father's favorite dessert my grandmother always made sure there was one when he visited. I too perfer pie. but alas I am not a good crust maker but I will keep on baking pies.
    how nice to visit and enjoy each other. And funny I am just out out of my teens not that long ago Well I keep telling myself that anyway.

  11. My Guys were JUST ASKING about a strawberry pie...Hmmmm, this looks SO YUMMY!!! I am definitely making it and OF COURSE it will have "Your Name on it"... I usually don't make pie in HOT summer months "BUT" this is an exception and I'll be resuming my pie baking as soon as the APPLES ARE RIPE..."SOOOON"!

  22. They charge that at our local pie shop here on the west coast as well...and they don't llok nearly as pretty as yours! I quite like baking pies, so don't ever buy them.
