I'm going to try to post as many tried and true recipes for Thanksgiving as I can until Thanksgiving eve. Now, keep in mind that I work full-time so it's unlikely that you'll see a new recipe each day! LOL!!! But, I'll do the best I can.
What You'll Need - aka - Ingredients
1 9-inch pie shell, frozen or chilled for an hour if freshly made.
1 1/4 cups pecans, coarsely chopped (set some aside for decorating)
2 eggs, slightly beaten
1 cup light corn syrup
1/4 cup brown sugar
1 Tbsp molasses
2 Tbsp melted butter
2 Tbsp flour
1/4 teaspoon salt
1 - 2 tablespoons of burbon (optional)
1 teaspoon vanilla
Preheat oven to 375°F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients by hand and pour over pecans. The pecans will rise to the surface of the pie. Add some decorative pecans on top. Be sure to bake on a cookie sheet to protect the oven from spillage.
Bake at 375°F for 40-45 minutes until the filling has set. Remove from oven, let the pie cool and serve with vanilla ice cream!

Happy Baking!
P.S. Came across this nice blog A Robert Brault Reader with lots of quotes, check it out when you have a moment. This was my favorite. "Once you fix it in your mind that life itself is a gift, you begin to find happiness in just about everything."

Yum yum yum!! This looks fabulous, Mary, and I can almost hear the crunching sound and taste the sweetness in my mouth from having a bite of this royal pie (from the Pie Queen's kitchen!)!
ReplyDeleteScrumptious! It looks so tempting, I am having to fight my greedy impulse to rush out and make one right now.
ReplyDeleteLibrarian has just made it all the more difficult with her lovely comment - now I can also 'feel and taste' what I am missing!
Mmm! One of my daughter's favorites! She is the 'pie princess' in our house ... and makes this at holiday time! Yours looks beautiful! I love how the pecans have such a randomdesign when they rise up through that sweet custard! Mmmm!
ReplyDeleteLooks yummy, I so enjoy making pies and I just might give this one a try! Thank you for sharing, Julie.

There IS no option when it comes to including including bourbon! LOl I need to make me my favorite pie. I usually let someone else bake it for my B-day because I'd rather have it than a cake. Just need to go out and get some molasses. ~ Sue
