Not that I want to rush the summer season, but I was sitting on the porch in Maine and began imagining all the summer bounty that I'd like to preserve.
There will be certain things for sure, tomatoes and tomato sauce, and black bean corn salsa.Then there are the pickles, and sweet peppers.
I was wondering about radishes, has anyone ever canned radishes? I have a garden full of beets that will also get processed.
Those are some of my summer dreams, what are yours? I'd love to hear them!

Every year I make about 45 jars of strawberry freezer jam. My family and my sister's family prefer it. I have yet to can anything, but I would love to try something this year.

I love to can orange marmalade. My mother has a grapefruit tree and its laden with furit this year.

I love braised radishes and will freeze extras. I've never canned radishes, per se; but, have certainly pickled them in my bread and butter rime like cucumbers. I think they would be too 'light' to use a dill process. Try it. All you can do is fail!
ReplyDeleteWow, you sure have a bountiful garden. We only planted a small row of radishes, but are already on the second crop. Love them with bread, butter and salt.

ReplyDeleteAlas, since we no longer have a garden we do not have the opportunity to be preserving our own fruit and vegetables any more. But, that said, we do enjoy the summer for all of the different things as they come into season.
Just now a summer dream would be to be eating freshly caught lobster in some small, seaside [maybe in France] restaurant. Some hopes in landlocked Hungary!!
I too, can't wait to get canning. Peach salsa, peach preserves, pickles and tomato sauce. Make sure you have a bouquet on the porch when I come up. I can almost feel the stress disappearing. Wonderful photo!!

Black bean corn salsa -- yummo! I have never canned or preserved. A bit concerned about the sterilization that's required. :/ Here they pickle just about anything, even cauliflower and it is so yummy! Enjoy summer's bounty! Tammy
ReplyDeleteHere are my summer dreams.......I would like to sit in my garden with a pitcher of Pimms Cocktail with all my virtual friends that I have met on-line, I would then feed them with fine food and wine. The herbs would be from my garden and the wine will be from the local vineyard! We would talk well into the night and watch the shooting stars that we see this far down in France!

I have zero experience with canning as I'm terrified I'm going to do something wrong and poison someone. Silly, but true. However, I LOVE radishes and often eat them alone with salt, olive oil, and red wine vinegar. I grew up eating this as it's a typical summer Portuguese side. And it's yummy!
ReplyDeleteI am growing cucumbers for the first time this year and hope to have a bumper crop so I can make pickles too. I also love my mother's old fashioned refrigerator pickles that I'm hoping to make from them.
ReplyDeleteI don't want to rush the season either - winter is just too long here! It does sadden me to think it's the middle of July already.
I'm still dreaming that summer will actually arrive here on the west coast this year! We have not had much 'sitting on the porch' weather as yet.

She was too homesick to stay too far away from home and ended up going to OSU. My boys graduated in 1999...wonder if that was close to your hubby's time there??
