Epic Snowstorm & Fabulous Meatloaf

Well, if you haven't heard, we have had a snowstorm of epic proportions!  The East Coast from New York to Maine has come to a grinding standstill!  My husband and I decided to go to our weekend home Thursday evening - work was canceled on Friday.

I'm now worried that maybe we should have stayed in Massachusetts!   It has been snowing for over 24 hrs. in Maine ~ thankfully the end is in sight, but the blowing is awful.

Our neighbors can't get out of their homes, the snow is packed up against their storm doors, and they can't open them - some irony there!  Some have gone out windows . . .

So to deal with the stress of 4 foot high snow I cooked up a fabulous meatloaf!  It has become our favorite!

I found this recipe on Stonewall Kitchen's website this past autumn and have made it several times.  I substituted their relish for red relish from the market.  It was a lot more cost effective.




Ingredients
3/4 pound ground beef (I like lean)
3/4 pound ground pork
1/2 cup onion, chopped
1/3 cup red relish (I used Howards red relish.  Cains makes one too!)
1/4 cup tomato sauce
3/4 cup breadcrumbs (I used 1/2 panko 1/2 basic crumbs)
1 egg, slightly beaten
1 1/2 tsp. salt
2 Tbsp. Stonewall Kitchen Country Ketchup
2 Tbsp. light brown sugar

Directions

  1. Preheat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.
  2. Combine the beef, pork, onion, red relish, tomato sauce, breadcrumbs, egg and salt. Mix thoroughly and place in prepared loaf pan.
  3. Combine the Ketchup and brown sugar. Spread this mixture over the meat loaf.
  4. Bake 1-1 1/4 hours until the meat loaf is firm and has an internal temperature of 160 degrees F. Remove meat loaf from the oven and drain off fat and let “set” 15 minutes before slicing and serving.

  4. My boyfriend Duke looks comfortable under the covers. You guys got slammed too. I hope you can get to the snow blower soon and start to clear out a bit. The meatloaf looks like the perfect fare for a storm. Steve loves your meatloaf recipe.

  10. Good afternoon, hope the weather is beginning to subside for you down there in OOB. Did you receive any damage from the high tides? The snow drifts here are pretty impressive, thankfully the snow has finally stopped, but the wind continues to howl. It took me an hour to dig my car out and another to get to the coop. Ah, winter in Maine. Perfect winter meal meatloaf and I always have a jar of Howards red pepper relish on hand as well as Nancy's corn relish. Maine staples.   12. Oh I hope that you get to see some of that surf before you head back to your home in Massachusetts. It was something else entirely and now is so cold that I'm finding it hard to believe that tomorrow the temps will climb above freezing. We'll see. One thing I do know: my hubby blew his perfect record of predicting that there'd be no snow. Take care out there now!

  16. The snow storm was on German TV last night in the news, they were saying that in some states the governor had issued driving restriction after 4.00 pm. I think the best thing to do in such weather really is to stay put, and I am glad you are safe and warm in your house! Hope you were not affected by any power cut.

  18. Wow, this is some storm! It really puts the whole thing in perspective when you see a car fully covered. I can understand how one might get lost under these circumstances!! When it snows..make meatloaf:) and yours looks so good. I like adding the pork too.. it adds so much flavor.

  26. Yummmmm... terrific looking meatloaf. I'm looking for inspiration for tonight's dinner, but for once I have ground pork on hand but no ground beef! It's going to be chicken breasts after all. What can I do different with them. I think it will involve barbecue sauce, too many half-filled bottles taking up space in the fridge. I'll apall my DH by mixing'em all together. And with some hot buttered noodles, and something green, I guess we'll manage.
    How are you doing today with this icky, sloppy rain, making a snowy, soppy mess that will likely freeze on the roads tonight?

    1. I got some ground beef and tried this meatloaf on Tuesday night. Discovered I had neither red relish nor pickle relish, or even my mother's home-grown and preserved Piccalilli. How does this happen? So I minced some dill pickles and roasted red peppers. My family loved it. I had one serving, and the rest was inhaled by DH and The Locust (16 yrs, 6'2" and growing). Thanks for sharing the recipe. It's going in the Keeper file.
